I’m excited to start a new month with Menu Plan Monday! We did some freezer cooking this weekend–Chili and Bean Burritos (mine used Daiya cheese and just beans and all of them used gluten-free homemade tortillas!) and it only took a couple of hours. I was surprised how easy it was and I’m excited to have portable easy lunches available again! I also enjoyed this yummy dairy free cheese dip–I never made the chips to dip it in, but I ate up a lot of zucchini slices with that dip!
The theme for the Gluten Free Menu Swap over a Celiac Family is Brussel Sprouts. We love Brussel Sprouts around here! Everyone will eat them anyway they are cooked except my husband doesn’t care for any roasted vegetables. I usually just get frozen and warm/cook them, but some of the ideas at Celiac Family look like fun!
I found a gluten-free slow cooker cookbook at the library and I’m enjoying adding some veggie based meals from there every week this month! It feels wonderful to be using a slow cooker again!

Sounds like you will have a mess! I was surprised that it only took like 1.5 hours…not including organizing the freezer a little better so I could fit everything in! 🙂

♥ Daiya. Yummy. One would never know it was a cheese alternative. I want to do the chicken and waffles but syrup and agave sweetner do not agree with me. Gonna have to find an alternative.

I don’t like agave either. Have you tried honey? I also like to top mine with almond butter and strawberries, bananas, or maybe I’ll try oranges this week!

I haven’t tried honey but it is worth a shot. Maybe I can melt a little almond butter to see how it tastes. Perhaps my taste buds have changed because I can hardly take tge sweetness.

That’s possible. When I use almond butter and fruit I don’t really need any other sweetener. I can’t get tons of maple syrup like the Princess does! Yikes!

Did you know the professor is scared to death of Brussels Sprouts?

Really? If you throw some knives at them they shouldn’t be so scary. Also I’ve heard roasting them with bacon is awesome, but I haven’t tried that.

Haha! That’s what I must do.

Roasted vegetables are much tastier than cooked any other way.

But sprouts…

When was the last tine you tried them? I used to think I didn’t like them but I actually do. Plus like Susan said…roasting veggies make them coolio and nothing tastes bad with bacon!

I like the idea of the dairy-free cheese dip. I’ll have to give it a try.

It is yummy! I saw too many pictures of that velveeta dip this past week and I had to find something similar that I could eat!
