Menu Plan Monday, February 3

I’m excited to start a new month with Menu Plan Monday! We did some freezer cooking this weekend–Chili and Bean Burritos (mine used Daiya cheese and just beans and all of them used gluten-free homemade tortillas!) and it only took a couple of hours. I was surprised how easy it was and I’m excited to have portable easy lunches available again! I also enjoyed this yummy dairy free cheese dip–I never made the chips to dip it in, but I ate up a lot of zucchini slices with that dip!

The theme for the Gluten Free Menu Swap over a Celiac Family is Brussel Sprouts. We love Brussel Sprouts around here! Everyone will eat them anyway they are cooked except my husband doesn’t care for any roasted vegetables. I usually just get frozen and warm/cook them, but some of the ideas at Celiac Family look like fun!

I found a gluten-free slow cooker cookbook at the library and I’m enjoying adding some veggie based meals from there every week this month! It feels wonderful to be using a slow cooker again!

Sunday
Breakfast: Larabars, toast, frozen coffee drink
Lunch: Chili, Cornbread
Dinner: Cheese dip, brown rice chips, zucchini, olives, fish

Rest of the week:
Breakfast:
Eggs all kinds and all ways!
Mango Marriage Saver Smoothie
Carmel Apple Breakfast Casserole (with gluten-free bread!)

Dinner:
Breakfast for dinner: Waffles (Not sure what kind yet!)
Oven fried chicken (fish for me!), mashed potatoes, sautéed zucchini/onions
Tamale Pie
Bean Burrito
Cumin Lime Bean Quinoa Salad
Pizza, Salad
Mango Marriage Saver Smoothie, popcorn
Potato Chip Fish, sweet potatoes fries, roasted broccoli

  1. ♥ Daiya. Yummy. One would never know it was a cheese alternative. I want to do the chicken and waffles but syrup and agave sweetner do not agree with me. Gonna have to find an alternative.

      • I haven’t tried honey but it is worth a shot. Maybe I can melt a little almond butter to see how it tastes. Perhaps my taste buds have changed because I can hardly take tge sweetness.

      • That’s possible. When I use almond butter and fruit I don’t really need any other sweetener. I can’t get tons of maple syrup like the Princess does! Yikes!
