I was so delighted that the Princess drank the Pink Panther Smoothie and said, “Mommy that was yum yum in my tum tum tum,” and asked for it again the next day! She’s also started eating breakfast cookies again. I am so thrilled she’s eating something besides cereal that’s portable which we certainly needed adjusting to the time change last week.
The theme for the Gluten Free Menu Swap over Celiac Family is avocado. I love avocado and think it is good in just about anything. This morning I had some in my Pink Detox Smoothie and it also makes a delightful Chocolate Shake for a decadent less healthy treat.
I made some seriously ugly, but melt in your mouth yummy peppermint patties to celebrate St. Patty’s day today! The rest of the week is going to be busy, so we’re having some simple meals with lots of veggies that I stocked up on at the Farmer’s Market this weekend.
Sunday
Breakfast:
Buckwheat granola with strawberries and almond milk
raisin toast with butter
coffee
Lunch: Portobello steak (regular steak for everyone else), coleslaw, potato salad, steamed asparagus
Dinner: Popcorn, roasted broccoli and cauliflower, strawberries with vanilla coconut ice cream
Rest of the week:
Breakfast:
Eggs all kinds and all ways!
Paleo Cereal
Paleo Chocolate Breakfast Cookies
Leftover Vegan Hash
Pink Power Detox Smoothie (This is SO good!)
Dinner:
Breakfast for dinner: Vegan Hash (canned hash for hubby) with eggs
Some soup from the freezer (again!) either veggie or chili!
Sweet Potato Soup
Either Seafood Gumbo or a stir fry with sweet and sour sauce.
Tomato/cucumber sandwich
Pizza, salad
Pink Panther Smoothie, popcorn
Pan cooked Fish with honey/balsamic vinegar sauce, sweet potato fries, roasted veggies

She is! She’s somewhat like that little girl with the curl right in the middle of her forehead. When she is funny she is very very funny, but when she is not….
It is very good. I even made an adult version for my husband which he thought was terrific.

Quite true!
There is apple juice, strawberries, banana, and ice cubes. The adult version has maybe a little less then a shot of tequila.

Ah I know they are terribly ugly. I tried to roast 4 pans of veggies and cook fish while making them and it just didn’t happen the right way. I wanted to add a picture of my delightful pink smoothie this morning but I had to run out the door. The peppermint patties are very yum yum!

I rarely add avocados to my smoothies, because I always save them for salads and guacamole. But, I definitely need to make the Chocolate Shakes! 🙂

I am the only one who will eat avocados around here so occasionally I buy one too many–then into the freezer it goes and I’m set for making the best chocolate shake I’ve ever had without the icky feeling afterwards! 😀
