Menu Plan Monday, March 31st!


So, last week was Spring Break. I think I spent the whole week thinking up things to use up excess energy the Princess always has so that she would SLEEP. I do so hate fighting about sleep when everyone is tired. Good news: I succeeded to a point! I wore myself out in the process and had no extra thinking or even cooking time. Alas, I can’t even remember exactly what we ate, but I do remember sandwiches several times. I did have a plan, but it didn’t always jive with the wearing the Princess out plan! It’s back to school this week though and I have been cooking all weekend so we should eat better.

The theme for the Gluten Free Menu Swap over Celiac Family is asparagus. We are certainly asparagus fans around here! We usually eat it simply steamed or grilled. I love throwing leftovers into scrambled eggs! The princess won’t eat the harder stems, but she does love the tips.

I completely forgot to take pictures of food last week, so here’s a picture from the zoo of the Princess on a dragon! I spent the weekend making several things: ice cream with cookie dough, pickled beets, Breakfast cookies, cookies (which we never baked because we just like eating the dough), Chocolate Chip Cookie Dough Larabars, and roasting extra veggies to make the week easier. baking and cooking and roasting veggies, so hopefully that will cut back on actual work during the week.

Pancakes, grapefruit
Lunch: Veggie Burger (beef burger), roasted potatoes, beets, corn on the cob
Dinner: roasted broccoli, strawberries with vanilla coconut ice cream and chocolate sauce

Breakfast for dinner: Vegan Gluten-free Waffles
Tacos (I will probably try this Lentil/Quinoa Taco Filling with Spicy Butternut Squash Nuggets (from Peas and Thank You, no longer available)
Beans with hot dogs for everyone else and some sort of veggies for me
Veggie Pot Pie with mashed potatoes instead of biscuits
Pizza, salad
Pink Panther Smoothie, popcorn
fish sticks, sweet potato fries, roasted veggies/canned peas

    • There just didn’t seem to be anything to eat in the house in the form that I wanted to eat it in. Particularly breakfast and snacks for some reason.

      The Princess had loads of fun. It’s been a year since we took her to the zoo and she’s talked about it at least every month. She saved her pennies so she could get something out of the gift shop and on the way home right before she fell asleep from exhaustion she said she would like to go to the zoo everyday.


      • You know, breakfast is always hard for me. Always.

        That’s special. I still love the zoo! But I remember going (when I was a little professor) in hopes of seeing lots of bears! And then I always liked the sea creature tubes. I wonder if they still exist.


      • Yes, breakfast is hard. I think it’s because you are either extremely hungry and can’t figure out what to fix or not hungry at all with the same result. That’s why I did all that cooking. Heat and go!

        We didn’t see the bears this time (due to attention/tiredness problems), but we saw lions and tigers!

        Sea creature tubes? What did they look like? The Princess got a plastic case of zoo animals –when you take off the back it turns into a playing mat. Last year she picked a magnet and a zoo ball both of which are still around.


      • That’s exactly the problem with breakfast. Vexing thingy…

        Tigers are coolio!

        I forget! I think it was a plastic tube. That sounds like something the professor would play with! *laughs*


      • Those tigers did not look tame. The lions looked contented, but the tigers looked fierce.

        There are so many coolio toys in the zoo gift shop! If I wasn’t nervous about something getting broken I would wander around there a lot longer.


  1. How cute. She looks adorable on her “pet” dragon..LOL! You must give an update on the Tacos with the lentil and quinoa filling, I bet that will be very interesting.
    Currently I have been eating a “chorizo” like filling for my tacos with brown rice tortillas and rice. I must say it is quite delish. I would like to start eating more of a taco variety since summer is coming and less cooking in the summer on the second floor where the heat rises the better. 🙂


    • Well you just motivated me to try the new recipe for tacos 😉 I like that it is in the crockpot, but I was going back and forth between that and my regular mushroom taco filling.
      Yes, I am dreading the heat since it’s been so nice and chilly all winter. My favorite veggies are roasted and I’m not sure what to do about that!


      • The mushroom filling sounds interesting. I went back to eating organic tomato sauce with mushrooms test if the acidity would affect me and it didn’t. Only thing is I wish I purchased more mushrooms since the store brands are so skimpy. Think I’m gonna try lightly pan fried mushrooms as a soft taco filling. And with such muce weather I am sure you can put that grill to use.


      • The store brands are skimpy, you are right!

        The mushroom filling was from a book, but I can’t remember which one. It has chipotle peppers with adobe sauce (just a little if you don’t care for spice), liquid smoke, and maple syrup, and probably some other spices I’m not recalling. Then it is served with avocado to take some bite off the heat. Very yummy, easy, and quick.
        We just got a new grill and I know my husband it dying to try it out. He’s the grill user around here.


      • Oooh that does sound yummy. I probably would alter the recipe a bit, substituting maple syrup for a dash of agave but definitely into the spice. BTW what is liquid smoke?


      • I made my sister make this recipe and she thought it was too spicy! I didn’t realize my tastes had changed that much 🙂

        Liquid smoke is kind of like the taste of the grill in liquid form. The bottle I got in the regular store said gluten free right on it and it’s great for imparting a sort of meaty taste. A little goes a long way, but its a great taste.


    • She didn’t want to see the live dragons at first and the live ones wouldn’t come out because it was too cold!
      I could eat the pickled beets today! Yay! They were supposed to be in the fridge for a couple of days before eating and it is hard to wait for them.
      Ah yes. I do remember and I’m slightly dreading it, but thinking it will be fun too. If she takes naps.
