Menu Plan Monday, June 9th!

It was a splendidly busy week. The Princess graduated and I managed to keep her sufficiently busy that we didn’t even notice school was out. This week is Vacation Bible School and she’s super excited because she is in a class with her best buddies. In order to make sure she stays gluten-free I am packing her snacks each day. I will list them out with the menu plan!

The theme for the Gluten Free Menu Swap over at Celiac Family is summer grilling. We do love to grill around here. Me because that’s my husband’s job and I only have to worry about sides and my husband because he thinks it is a manly thing to do. We already grilled burgers this week! I had this veggie burger that I pre-cooked so it didn’t come completely apart on the grill. I am also interested in trying to grill some summer squash. We seem to have a TON of it all of a sudden and I’m trying to come up with new ideas of what to do with it. I saw this idea that we might try out.

Vacation Bible School is always crazy and super tiring, so again we’re going with the theme of quick and easy!

Sunday
Breakfast:
eggs and hash browns
Lunch: grilled burgers/veggie burger, corn on the cob, beans, onions and tomatoes
Dinner: Popcorn

Rest of the week:
Breakfast Choices:
Pink Panther Smoothie
Eggs
Pancake
Paleo Chocolate Breakfast Cookies

Dinner:
Breakfast for dinner: I’ll be trying to get some breakfast choices in the freezer. So maybe some chocolate muffins and some protein bars with a smoothie
Pasta Salad with tons of veggies
Shrimp stir fry with shrimp/veggie egg rolls
Tacos
Lunch out
Cumin Lime Bean Salad
Pizza, salad
Random special smoothie (with blueberries), popcorn
Leftovers!

Vacation Bible School Snacks:
Fruit and yogurt parfait in an gf ice cream cone
Grapes, cheese, and crackers
Popcorn, Popsicles
apples & graham crackers (I will have to figure something out for that!)
Trail mix (M & M’s, pretzels, cranberries, raisins)

Another Milestone Passed…

About 10 years ago I always thought that graduation ceremonies from Kindergarten and Preschool … well they were just silly; especially preschool! I mean when I graduated from high school I had accomplished a lot including surviving 12 or so years of school! That’s a big thing when you are 18 or 19. Preschoolers or kindergarteners have learned their ABC’s really well and some basic math and PLAYED a LOT!

The Princess helped me change my mind this year as she has with so many other things since she came along. Preschool graduation reminded me a lot of her first birthday. She had no idea what was going on and although she wasn’t adverse to chocolate icing (you could keep the cake thank you very much!) the first birthday was just a breath of relief for me and my husband as parents. We had made it through the first year!

I feel like I accomplished something when she graduated from Preschool. Those 180 days of getting up and getting dressed and out the door–that is HUGE. Especially when 45 days or so of that were sick days and we didn’t make it out the door, but we did stay home and practice learning to blow noses. (At one point during the year she wouldn’t blow her nose unless I was blowing mine at the same time!) And those first best buddies that the Princess made and the fact that I got to be good friends with their moms was also something that I didn’t expect, but was a wonderful addition to our preschool experience.

So the Princess’ accomplishments after the first year:
-She is well versed in her ABC’s
-She can count to 100 (as long as you don’t ask her to!)
-She can get dressed and put shoes on by herself (one of my favorites!)
-She has learned to say stop please when someone is doing something she doesn’t like (instead of screaming!)
-She has learned to play well with others

Plus so many other things! I can’t believe how much she has grown physically, academically, and spiritually throughout the past year and I am super proud of her accomplishments.

I won’t say that I don’t dread the end of school, but I am also looking forward to a break with some schedule wiggle room. Here’s to a fun-filled learning experience and a wonderful summer!

Menu Plan Monday, June 2nd!

So I got sick! And it was hard getting my energy back after that silly cold what with a couple of jobs and trying to keep the Princess as busy as possible! This will be a better week though and here’s a menu plan to prove it! This is the last week of school and hopefully the last week my husband has to work on the weekend (he’s worked 3 out of the last 4 weekends!)

The theme for the Gluten Free Menu Swap over at Celiac Family is road trips. Plenty of snacks is always a good thing during a road trip although we don’t plan to go very far this summer. I might make some Larabars, and maybe these other bars for our two hours or less trips!

One more day and my baby graduates from preschool! It’s been a fun year and we’re already looking forward to kindergarten! It’s a super busy week, so I’m relying on very easy, quick meals that can be packed in a lunch bag if necessary.

Lunch: Fish with sauce, leftover potato salad, homemade pickles
Dinner: I don’t remember actually. We weren’t hungry so maybe just some fruit.

Lighter Gluten Free Chocolate Muffins
Waffles
Paleo Chocolate Breakfast Cookies

Dinner:
Breakfast for dinner: I might try a new waffle recipe or I might just stick with our favorite GF vegan waffles
Hot dogs and beans (some sort of green veggie with my beans since I don’t eat hot dogs)
Meatloaf, broccoli/brussels sprouts, baked potatoes
Lunch out
Potato Bar with veggies and cheese (maybe bacon for the meat eaters)
Cumin Lime Bean Salad (if I make the time to fix it!)
Pizza, salad
Random special smoothie (with blueberries), popcorn
Leftovers!
