Menu Plan Monday, July 7th!

I never intended to take an entire month off, but that is exactly what happened! I had no idea I was in such a busy stage of life, but between Vacation Bible School(s), starting my new job, swimming lessons, being out-of-town, etc. this past weekend was the first time we had to “sit quietly and just smell the flowers.”

The theme for the Gluten Free Menu Swap over at Celiac Family is peaches! What a lovely summer fruit. It’s not my favorite to eat because of the fuzzy skin, but whenever I get some I always make this lovely coffeecake. Even my husband who boycotts all cakes actually loves this coffee cake. Other than that we usually skip the peaches and go right to the nectarines!

We are still in the middle of swimming lessons. The Princess FINALLY made some progress on the last two days of her 2 week class. We signed her up for another two weeks in hopes that we’ll have a little fish at the end. Swimming lessons really put a damper on cooking though as they are right around dinner prep and we get home starving with no time to cook!

In addition, our garden has taken off with TOMATOES of all sorts and shapes. We made around 4 quarts of fresh tomato sauce and froze some last week and this week we have another whole window sill of ripe tomatoes again. I’m trying to come up with some ideas of what to do with them that doesn’t involve canning.

Sunday
Breakfast:
Pancakes with strawberries and coconut whipped cream and frozen coffee!
Lunch: salmon, sweet potato tater tots (I used almond meal with mixed reviews from the troops), steamed brussel sprouts, corn
Dinner: fruit and cereal

Rest of the week:
Breakfast Choices:
Pink Panther Smoothie
Eggs
Leftover Pancakes
Vegan Gluten-Free Waffles

Dinner:
Breakfast for dinner: Omelets with veggies
Spinach Melon Salad
Gluten-free pasta with fresh tomato sauce
Grilled Cheese
Garden Enchilada Bake (from Peas and Thank You, no longer available), using this Enchilada Sauce
Pizza, salad (I usually use daiya cheese for my pizza, but I’m going to try this! I use my own favorite gluten-free crust)
Blueberry Cheesecake Smoothie, popcorn
Leftovers!

  1. Hi Bethy! You’ve been busy. Summer just is a busy time, I think. Swimming lessons? That’s so cool. I swim when I sink–strike that and reverse it. I sink when I swim, that’s it.

    Did VBS go well? Was it about strange animals?

    • Yes summer is busy! I thought I was busy during the school year but throw out the regular routine add in an extra job and the fact that if I plan extra activities for the Princess she actually sleeps at night…well then you do have busy!
      I never had swimming lessons. I do well enough not to sink as long as someone isn’t trying to drown me. In FL they seem to be necessary evil. They are VERY hot! Standing in the sun for 30 minutes in the late afternoon ..yikes!
      VBS #1 and #2 went well. #3 is next week. The Princess is very fond of them. #1 had a space/creation theme. There was an odd looking robot wondering around. #2 had a spy theme. I just dropped off for that one so I am not sure if there were any animals around. #3’s theme is wondering in the wilderness. I bet there will be some strange animals in that one.

      • *laughs* Yes, I suppose the place to be would be in a cool pool. Maybe with a slide.

        My church up here had one just a bit ago and it was about weird animals. So I was just wondering.

        The Wilderness! Make sure she goes with a sword.

      • How about a Princess wand? That might be more her style at this point. Although, we just watched Brave so maybe I could talk her into a sword. Although Moses and the Children of Israel didn’t really need swords ….

        I LOVE water slides. I was too scared to go down them when I was younger.

  3. Oh wow! We have been on a smoothie kick lately will have to try the Pink Panther & Blueberry cheesecake sometime…they sound great! That melon salad looks great too!

    • The Pink Panther is what finally convinced my daughter that smoothies were yummy and I wasn’t just making smoothies to try and get her to eat something that was good for her! And that means she’s finally eating a fruit that isn’t apples or bananas!

    You’re going to be eating a lot of great meals! A blueberry cheesecake smoothie sounds delicious and especially refreshing given how humid it’s been in my part of the world.

    • I would totally share some of our tomatoes if I could! The last two years our garden has done NOTHING, so I refused to help with it this year. My husband got enthusiastic with planting tomatoes because he figured they wouldn’t do anything again…15 plus tomatoes plants overdoing it later…

      The blueberry cheesecake smoothie is yummy. I thought it might be a little weird, but its quite tasty!
