Menu Plan Monday, September 1!

The theme for the Gluten Free Menu Swap over at Celiac Family is gluten-free Italian food. My favorite is spaghetti and meatballs. It is not on the plan for this week, but I try it usually at least once a month. It can get complicated with 3 different noodle needs/preferences plus 1-2 different sauces and meatballs! Another favorite for me and my husband is lasagna. The last time I made it with cashew ricotta and Portobello mushroom caps and it turned out pretty good.

This week I have a little extra time off work, so I am working on some freezer breakfasts! Today was Lighter Chocolate Muffins, and tomorrow is Peach Coffee Cake. I’ve also been reading through a new cookbook, “Choosing Raw.” I am hoping to integrate some of those recipes also. Some of them sound so easy and all of them sound healthy and yummy! A couple that I want to try are “Buckwheaties,” “Easy Pumpkin Soup,” and a raw chocolate granola.

Sunday
Breakfast:
Peach and raspberry fruit bowl, gf cinnamon raisin toast.
Lunch:
Irresistible Grilled Shrimp, sweet potatoes, corn on the cob, fresh fruit salsa to go with the shrimp
Dinner: Leftovers

Eggs
Pumpkin Waffles
Chocolate Muffins
Peach Coffee Cake
Paleo English Muffins
Sweet Potatoes

Dinner:
Breakfast for dinner: Pumpkin waffles didn’t happen this week, so this is a repeat!
My husband’s famous Chili with cornbread or rolls
Chef Salad with croutons
Avocado Salad
Peachy Keen Smoothie from “Choosing Raw” cookbook with popcorn
Veggie soup from the freezer
Pizza, salad
Leftovers!

    • What are they Lady? I prefer zucchini noodles, my husband insists on gluten noodles and my daughter will only eat gf pasta! I am still working on a good meat alternative that is easy!

      • The noodles are called Tofu Shirataki and the meat alternative is called Beef Free Crumble by Beyond Meat. I know Whole Foods sells Beyond Meat Chicken free strips. As for the noodle alternative try http://www.house-foods.com to see if they have a store locator. đŸ™‚

      • Really. Perhaps it is a food allergy. I didn’t realize my system didn’t like corn until I stopped eating it and then I reintroduced it back into my diet. Not sure why but since I cut it out my allergies have almost diminished. This summer with sneezing and itching has been drastically reduced and all because I stopped eating corn. Even the organic kind.

      • When I first went meat free I got into a lot of tofu/soy stuff just because I didn’t know any better. That was when I was reacting to EVERYTHING too even stuff like coffee and certain almond milks/coconut milks. Now I’m doing much better and have even added in butter and fermented kefir and coffee back I think I could probably try soy and see if it still bothers me. I have eaten some processed things that have soy as one of the smaller ingredients and it hasn’t bothered me. Just haven’t tried tofu yet.

      • Ah the journey to healthy living. Same here. When I stopped eating bread, cheese, and cream cheese and used the alternatives my body didn’t know the difference so I stopped eating them for awhile and reintroduced them. I am fine now but have to do a balancing act because I can’t do them all in the same day
        More like I have to spread them out. Congratulations! You’re the first person I know allergic to soy and tofu. Lol! Keep me posted on your results.
