I went shopping this week and my fridge is full of yummy stuff to eat! I’m excited for this week’s menu plan!
The theme for the Gluten Free Menu Swap over at Celiac Family is oregano! We love oregano, but I don’t think I’ve ever used fresh. It’s a main ingredient in our favorite spaghetti sauce (adopted from Better Homes and Gardens) which I do plan on making this week!
Sunday
Breakfast:
Grain Free Granola, fruit, coffee
Lunch:
Chicken and Broccoli Casserole (plan to post the recipe later this week!)

Double chocolate hazelnut bread from my gluten-free, vegan cookbook Still working on it!
Paleo Chocolate Cookies with sausage/yogurt for the Princess
Tropical Smoothie
Flourless Double chocolate Peanut butter Blender muffins (sub some almond butter probably!)
Dinner:
Spaghetti and meatballs (zoodles for me, gf pasta for the Princess, regular pasta for hubby)
Crock Pot Southwestern Corn & Potato Chowder
Broccoli Quesadillas
Shrimp Scampi
Southwestern Veggie Wraps
Pizza, salad

It used to be even worse when I couldn’t eat any meat! What is supposed to be an easy meal can suddenly turn into a nightmare! 🙂

I have transitioned from vegan to eating meat again and oh boy does that sandwich look delish. Funny thing though, I don’t feel overwhelmed but I am very selective on how much meat I do consume.

I love that sandwich! I found treeline cashew cheese and it just makes the whole thing amazing! Yes I am eating tiny bits of meat here and there. Bacon is the best!

Treeline cashews cheese sounds interesting. Before I didn’t like almond milk but now I am eating and drinking almond “yougurt” and milk.

I’ve always loved cashew cheese, but I don’t ever do a great job making it (short attention span?) This tastes like a goat cheese or feta. I love that its not crumbly and you can slices it!
I’ve been purchasing some coconut milk yogurt for baking and smoothies and sometimes eating. Still have a hard time with the taste of almond milk stuff other then milk!
