Menu Plan Monday, October 19th!



Whew! Who knew fall would be busier than summer! I’m hoping to make time for writing, as I have been missing it a lot. And I am excited to be cooking some more fall dishes! No offense summer but you have over stayed you’re welcome!

The theme for the Gluten Free Menu Swap over at Celiac Family is treats! I’ve been making a “treat” for breakfast only with less sugar. A pumpkin pie this week and then something with apples next week. I can’t wait for a slower weekend to make some Apple dumplings!

Not Chicken Pot Pie

Some Not Chicken Pot Pie I made a few weeks ago! Super yummy, especially with the biscuits on the side!

Breakfasts: cereal…I am going to attempt to make this grain free granola. All store cereal is tasting gross after eating it!
Lots of Double Chocolate Blender Muffins–Still going strong on these 🙂
Pumpkin pie–the recipe on Libby’s pumpkin can, only with coconut milk instead of evaporated milk.
Coconut vanilla almond smoothie
Dark chocolate quinoa bowl

Steaks, baked potatoes, corn, brussel sprouts
Steak salad
Bbq fish, sweet potatoes, veggie
Fish sandwich
Fried almond butter and jelly with salad
Tuna apple salad
Cheddar chowder (dairy free, gluten-free) I will be converting a recipe. If it works out I will post it!
Beans and rice/hotdogs
Smoothie and Popcorn
Pizza, salad

Healthy dessert: Coconut Vanilla Ice Cream

  1. I made the coconut vanilla almond smoothie, but with peanut butter. It was good and the boys liked it. I’ll have to try the dark chocolate quinoa bowl; that sounds delicious!


    • Ooo–I bet it would taste good with peanut butter. I tried it with the almond butter, but now I’m wondering about sunbutter! Haven’t had time to do the quinoa yet…maybe this weekend!
