Menu Plan Monday, November 7!

So–after being busy busy busy last week I didn’t cook much. We only got take-out once though, so I was happy about that. I kind of just cooked a few things and we made meals with those things. For instance, I made 4 cups of rice thinking beans and rice, but we ended up doing fried rice and I used the rest to make Dijon broccoli and rice one day and rice with mushrooms and any other veggies I could find another day. I’m ready for some healthy comfort foods this week! How about you?

Breakfasts:
pumpkin pie–just the recipe on the back of a can with coconut sugar and 1/2 cup of sugar instead of 3/4 cup. (I always use coconut milk instead of the evaporated milk to make it dairy free.) I also used some leftover snickerdoodle cookies for the crust (usually I just make the pie without the crust!)
Toast–almond butter and jelly toast can take you a long way in the morning!
Eggs

Lunches:
Leftover soup and salad
hot dogs, green beans, and chips for the princess
I’m honestly not sure what my husband is eating!

Dinners: (I am using dairy substitutes for all these soups–my favorite cheeze is the daiya brand)
Potato Soup with biscuits
Breakfast for dinner: probably these pancakes with apple butter
cheddar chowder with muffins
Roasted salmon, potatoes, asparagus

Menu Plan Monday, October 24!

We have a crazy week with fall festivals and field trips and other random stuff happening, so the menu plan–it is super simple. The goal here is to keep us on track budget wise while using stuff on sale and keeping from picking up take-out! I think this plan will do it!

Breakfasts:
pumpkin coffee cake (I actually ended up liking this cold? Maybe because its still warm in Florida or it could just be because I’m weird!)
apple cider donuts
Triple Berry Green Smoothie

Lunches:
Ham roll-ups with green beans and crackers for the princess
Sausages with sauerkraut and apples/Italian Sausage Potato Spinach Soup for me

Dinners:
Italian Sausage Potato Spinach Soup
Sandwiches –I’m thinking something like ham and guacamole for me
sausages/hot dogs with sauerkraut and apples, french fries
Out to lunch 😀
Chili and cornbread

Menu Plan Monday, October 17!

So, I completely planned to write out my menu plan…but I accidentally bought a bag of CHIPS (just potato chips, y’all!) that had gluten in them and the Princess ate them all week for school. Between dealing with the attitude and trying to figure out why in the world my daughter was only eating chips and applesauce…yeah that was about all I could handle really. So, I know that she is still sensitive to gluten (in case anyone was wondering)!

So, let’s talk about food, shall we? Now that we’re eating more than just chips and applesauce this should be more interesting for you to read. I’ve gone back to doing weekly menu plans again–at least for a while anyway.

Breakfasts:
pumpkin bread
apple cider donuts
mango banana smoothie

Lunches:
Homemade gluten-free vegan mac & cheese (yes, the Princess requested this and yes she is spoiled–but also she will be helping to make it!) Recipe coming soon!
Bacon/blue cheese/balsamic reduction sauce wedge salad for the hubby
Soup–I’m torn between cheddar chowder (this link is to a similar recipe–the original was from one of my mom’s cookbooks and you could use ham or bacon and pretty much any potato you wanted) or apple carrot ginger soup. We’ll see!

Dinners:
grilled BBQ chicken, potato salad, veggie
Egg salad on English muffins, side salad
One Pot Taco Spaghetti
Baked potatoes with frozen veggies
Pizza
Fish, roasted acorn squash
Hamburgers
I’m still undecided on how I want to roast the acorn squash. I’ve gotten requests for lots of butter and brown sugar. Each half might end up being cooked differently! And I’m still undecided on the sides for the hamburgers–I’m open for suggestions!

Menu Plan Monday July 22!

I was so thankful for the Chia Seed pudding last week! I spent 3 days at the beach with my mom and sister having a Girl’s Getaway and they both eat dairy. So part of breakfast every morning for them was a big bowl of yogurt topped with fruit…not something I can participate in if I expect to not be in pain for a couple of weeks. I remembered the Chia Seed pudding and whipped up a batch and then I too could join in the big bowl of something topped with fresh fruit. It was a delightful way to start the day. I used strawberries and kiwis this time around and it turned out better than any of my previous attempts.

The theme for the GF Menu Swap over at Celiac Family this week is grapes. I don’t usually buy grapes because they are on the dirty dozen and I can’t afford the organic kind, unfortunately. I do occasionally have to splurge on grapes because they are such a nice way to cool off. I usually eat them raw, but have been known to pop them in the freezer for an even better way to beat the heat!

This week we’re still cleaning out the freezer (I never knew I had so many bits of random leftovers in there!) and I’m looking ahead to school starting in a few weeks. We enrolled our daughter in Voluntary Pre-Kindergarten (VPK) and I have a feeling it will be a bit of a shock to have to get up and go every morning. So I’m planning a couple of freezer breakfasts every week. We’ll have some that day and then I’ll freeze some for those panicked mornings in a few weeks!

Melon Spinach Salad topped with fish
Beans and Rice
Fish, sweet potatoes, veggie
Pizza, salad
We’ll continue with cleaning out the freezer/fridge and of course eat up any leftovers!

Menu Plan Monday July 15!

Another week, another menu plan, another crazy week! If I didn’t menu plan I know that there would be severe general crankiness around the supper hour! This week I’ll be out of town BY MYSELF for a couple of days and I can’t wait! Consequently, I didn’t plan breakfasts and lunches (my husband probably wouldn’t follow the plan if I had done them anyway), but next week should be semi-normal again…whatever that means!

The breakfast pudding from last week was interesting. It didn’t have a strong taste (probably because I couldn’t bring myself to use ginger after being grossed out by the raw ginger juice during a recent cleanse) but it wasn’t unpleasant. It filled me up and kept be going and I felt no ill effects from it so I will be trying it again. Maybe with different seasonal fruits. This past week I used mangos and raspberries.

The theme for the GF Menu Swap over at Angela’s Kitchen this week is stir fry. I don’t have a stir fry on the menu this week, but I love how I can grab some frozen veggies, some shrimp, and some rice and make dinner in 20 minutes or less and it’s one that my whole family can eat!

Canned fish, humus, and whatever veggies are available…maybe some popcorn too!

Rest of the week:
Breakfasts:
Usual assortment of waffles, smoothies, and eggs.

Lunch/Dinner:
Chicken, sweet potatoes, brussel sprouts
Hot dogs & beans
Chili, corn bread
Burgers…I’m thinking of doing an Italian burger with spaghetti sauce and mozzarella cheese on top. Or if I’m tired and don’t feel like cooking because it’s so hot we’ll just have regular burgers with sweet potatoes!
Pizza, salad
We’ll continue with cleaning out the freezer/fridge and of course eat up any leftovers!

Menu Plan Monday May 6th!

We stuck pretty well to our menu plan last week. We definitely cleaned out the fridge before going shopping yesterday! I did make a treat that wasn’t on my menu plan–these Almond Butter Rice Crisp Treats! They were a delectable addition to several meals. This week I will be working mornings as I fill in for someone on vacation. This isn’t such a big deal, but it usually cuts down on my desire to be extra creative in the kitchen. There just isn’t as much time, so I kept things simple and brought out simple easy favorites. Now onto this week’s menu:

The theme for the GF Menu Swap over at Celiac Family this week is oranges. I don’t have anything in particular on the menu with oranges, but we have a nice bunch leftover from the blueberry orange muffins from last week. We will eat the oranges plain or maybe make those muffins again as they were quite yummy! We went blueberry picking this past week so we have extra berries also! Here’s the rest of this week’s plan:

Breakfast: German Puff Pancake from "Gluten Free On a Shoe String Quick and Easy" with strawberries and blueberries
Lunch: burgers with Udi's gluten-free buns, corn on the cob, potato salad, roasted asparagus, tomato and onion slices
Dinner: Still pretty full from the large dinner, but maybe some potato salad and other leftovers
